Seals Under Gems
In the demo version of Crash 2, the level layout differs in the Red Gem area. Instead of floating above a hole like it does in the final version, here the Gem is floating above ground, with a seal on it. This was altered later on, because it's possible to get the Gem by high-bouncing on the Seal and Belly-Flopping in mid-air (this problem wasn't corrected at all, actually- you can still do the same in the final version, though it requires some skill and also a bit of luck).

The TNT Crate seen in this picture was removed, probably to make things harder.

Iron Stack Moved
This picture, present also in the back cover of the game, shows the first ice portion of Snow Go. The 3 Iron Crates with the Life Icon on top of them weren't always on top of the ice. If you notice carefully, you'll see that they were initially a bit ahead. They were probably moved into the ice so that the player could get better acquainted with skating and jumping, by trying to get the life.

The Nameless Tiger
This screenshot, scanned from a very old unofficial guide, shows the Tiny boss fight. However, he has no name in his life bar. This, along with the fact that Tiny is named "TAZ TIGER" in the NTSC pause menu, prove that Tiny must've been one of the last characters to be named.

High Jetpack
Instead of floating just above the ground as usual, the jet-pack is high up in the air in these screenshots. The second screenshot makes it seem like it would lower itself to Crash once he moved forward.

If it Isn't a Crystal
Though you probably can't tell by just looking at the screenshot, it's showing the very first Warp Room cutscene with Cortex, when he tells Crash about the Crystals. But as you can see, the level Crash Dash already has its Crystal retrieved, which makes no sense at all (that really is the level's Crystal, not the hologram that Cortex displays later).

The "diggable" floor used to be grayish-brown instead of magenta.

Talk to the Mask
Crash is not facing Cortex as he speaks to him. Not only that, but he's also displaying his idle animation. His listening/head-scratching animation was probably not implemented at the time.

Different Bear Down
These images show the level Bear Down with unseen/altered segments that do not appear in the game. In case it isn't clear enough, the first picture shows a TNT next to a Surprise Crate, next to the whale pond.

Simpler N. Gin
N. Gin didn't always have 3 phases. At first he only had the red laser and missile phases, lacking the final green laser from its robot's stomach.

Eel Crates

Different Crate Counts
An old unofficial guide tells tales of how certain levels used to have certain Crate counts. The thing is, these Crate counts appear different in the game, so unless these were mistakes, it means these levels didn't always have the same number of Crates in them. They are:
   - Crash Crush (47 instead of 57)
   - The Eel Deal (80 instead of 81; see "Eel Crates" above)
   - Sewer or Later (56 instead of 57)
   - Bee-Having (100 instead of 92)

Flashy
In early versions of the game, Crash would flash white if he took damage with Aku Aku protecting him. Interestingly, the lone texture used in his model (the back) wouldn't.
